Recipe 4. Deviled eggs
Total cooking time – 25 minutes
Serves: 2
Ingredients
1. 4 eggs, hard-boiled
2. 1 avocado
3. Sea salt (optional)
4. 2 tsp hot sauce
5. 1 tsp lemon juice
6. Freshly ground black pepper
Method
1. Peel hard-boiled eggs and cut in half length-wise. Spoon out yolks into a small bowl.
2. Mash all ingredients like avocado and hot sauce together with egg yolks with and lemon juice.
3. To make it more spicy and tasty season it with sea salt and freshly ground black pepper
4. Refill egg whites with the yolk mixture and serve.
Recipe 5. Egg Muffins with Onion Salami
Total time: 40 minutes Preparation time: 15 minutes Cooking time: 25 minutes
Serves: 3
Ingredients
1. 6 eggs
2. 2/3 cup of diced halloumi cheese (look for sheep’s or goat’s milk varieties)
3. 1 medium white onion, peeled and diced
4. 1 cup of diced salami
5. Some cracked pepper
6. 2 tbsp. olive oil
7. A good pinch of sea salt
Method
1. Sautee some chopped onion in olive oil until they turn soft and golden.
2. Remove from a frying pan to a small pan.
3. Take some halloumi cheese and pan fry it on both sides until golden brown crust forms. Remove into the same pan in which you have the onion.
4. Then add the diced salami to the mixture and set it aside until cooking time.
5. Preheat the oven to 170 degrees centigrade before you do the onions till they are done
6. If you’re preparing the muffin filling the same morning as baking, turn the oven on before you start frying the onion.
7. Whisk all 6 eggs together with the yolks.
8. Spray baking muffin moulds with olive oil or rub some coconut oil or ghee on the sides and bottom.
9. Take equal portions of the filling of salami and halloumi for 6 moulds. Put in equal amounts of whisked eggs and stir each muffin case properly.
10. Place on the middle shelf of the oven and bake at 170C for about 20-25 minutes or until the muffins have become firmed and crusty on the top.
11. Cooking notes: A silicon muffin tray will help in removing baked muffins easily. Otherwise they might stick or burn from below you can use individual cases or a standard muffin tray. You can avoid the cheese by replacing the halloumi cheese with mushrooms or red peppers if you’re trying to avoid dairy completely.
